Today’s Unique Creation: Shrimp and Goat Cheese Stuffed Avocados

The combination of succulent shrimp, creamy goat cheese, and ripe avocados is simply divine. This dish is easy to make and bursting with flavor, making it a favorite in my household. Ingredients:

  • 300g of medium shrimp (peeled and deveined)
  • 3 ripe avocados
  • 150g of goat cheese
  • 100g of cherry tomatoes (halved)
  • a handful of fresh basil (chopped)
  • 2 tbsp of olive oil
  • juice of 1 lemon
  • salt and pepper to taste

Start by preheating your oven to 375°F (190°C). In a mixing bowl, toss the shrimp with olive oil, lemon juice, salt, and pepper. Place the seasoned shrimp on a baking sheet and roast in the oven for 10-12 minutes or until pink and cooked through.

While the shrimp is cooking, cut the avocados in half and remove the pits. Scoop out a bit of flesh from each avocado half to create a hollow space for the stuffing. In a separate bowl, combine the cooked shrimp, cherry tomatoes, goat cheese, and fresh basil. Mix everything together until well combined.

Once the shrimp mixture is ready, carefully stuff each avocado half with a generous amount of the shrimp and goat cheese mixture. Place the stuffed avocados back on the baking sheet and bake in the oven for an additional 5 minutes, allowing the flavors to meld together.

Remove from the oven and top with a sprinkle of freshly chopped basil for a burst of freshness. Serve these shrimp and goat cheese stuffed avocados warm as a light meal or elegant appetizer. Enjoy the creamy, tangy, and savory flavors in every bite!
