Ingredients:

  • rice noodles (200g)
  • tofu (150g, cubed)
  • fresh pineapple chunks (100g)
  • red bell pepper (1, sliced)
  • spring onions (3, chopped)
  • garlic cloves (2, minced)
  • fresh ginger (1 tbsp, grated)
  • soy sauce (3 tbsp)
  • lime juice (1 lime)
  • chili flakes (to taste)
  • vegetable oil
  • salt and pepper (to taste)

Kitchen Tools:

  • wok
  • chef’s knife
  • cutting board
  • tongs
  • grater

To start, soak the rice noodles in hot water until softened. In a wok, heat some vegetable oil and add in the minced garlic and grated ginger. Stir until fragrant, then toss in the tofu cubes and cook until golden brown.

Next, add in the sliced red bell pepper, pineapple chunks, and chopped spring onions. Stir-fry for a few minutes until the vegetables are slightly tender. Season with soy sauce, lime juice, chili flakes, salt, and pepper, adjusting to taste.

Once the flavors have melded together, add in the soaked rice noodles and toss everything together until well combined. Serve hot, garnished with extra spring onions and a wedge of lime for that extra zest.

This Spicy Pineapple Pad Thai dish weighs approximately 800g once cooked and serves 4. Each serving is around 200g with an estimated calorie count of 350 per serving.

One unique tip for this recipe is to marinate the tofu in a mixture of soy sauce, lime juice, and chili flakes before cooking to add an extra layer of flavor to the dish.
