Curried Pumpkin Soup with Coconut Milk

This dish is perfect for cool autumn days when you’re craving something warm and comforting. The combination of sweet pumpkin, aromatic spices, and creamy coconut milk creates a delicious and satisfying bowl of soup that will surely become a favorite in your household.

Ingredients:

  • 1 medium pumpkin, diced (about 800g)
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons of curry powder
  • 1 can of coconut milk (400ml)
  • 4 cups of vegetable broth
  • 2 tablespoons of maple syrup
  • Salt and pepper to taste
  • 2 tablespoons of coconut oil

To start, heat the coconut oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are translucent and fragrant. Stir in the curry powder and cook for another minute to toast the spices.

Add the diced pumpkin to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the pumpkin is tender.

Using an immersion blender, blend the soup until smooth and creamy. Stir in the coconut milk and maple syrup, then season with salt and pepper to taste. Allow the soup to simmer for another 5 minutes to let the flavors meld together.

Serve the curried pumpkin soup hot, garnished with a drizzle of coconut milk and a sprinkle of fresh herbs. This soup is perfect on its own as a light meal or paired with crusty bread for a more substantial dish.
