Ingredients:

  • 400g chicken breast
  • 1 ripe mango
  • 200ml coconut milk
  • 2 tbsp curry powder
  • 1 inch fresh ginger
  • 1 small onion
  • 2 cloves of garlic
  • 1 red bell pepper
  • Handful of fresh cilantro
  • 1 lime
  • Salt and pepper to taste

In the same skillet, add diced onion, garlic, ginger, and red bell pepper. Cook until the vegetables are softened. Add in the diced mango, coconut milk, and remaining curry powder. Stir until well combined and bring to a simmer.

Return the cooked chicken to the skillet and let everything simmer together for a few minutes to allow the flavors to meld. Squeeze in the juice of one lime and garnish with fresh cilantro. Adjust seasoning with salt and pepper to taste.

Serve the Mango Curry Chicken over cooked rice or with naan bread for a complete meal that is both satisfying and full of tropical flavors.
