As fall settles in and the leaves start to change colors, I find myself reaching for warm, cozy breakfast recipes to start my day. Today, I’m excited to share my recipe for Spicy Pumpkin Pancakes. These pancakes are the perfect combination of sweet, savory, and just a little kick of spice to wake up your taste buds.

Ingredients:

  • 200g pumpkin puree
  • 150g flour
  • 200ml milk
  • 1 egg
  • 50g brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cayenne pepper
  • 1 tsp baking powder
  • 1/2 tsp salt
  • for frying

Kitchen Tools:

  • mixing bowl
  • whisk
  • griddle
  • spatula

I start by mixing the pumpkin puree, flour, milk, egg, brown sugar, cinnamon, nutmeg, cayenne pepper, baking powder, and salt in a large mixing bowl. I whisk everything together until I have a smooth and creamy batter.

Next, I heat a bit of butter on a griddle over medium heat. Once the griddle is hot, I pour about 1/4 cup of batter onto the griddle for each pancake. I cook the pancakes for about 2-3 minutes on each side, until they are golden brown and fluffy.

Once the pancakes are cooked, I serve them warm with a drizzle of maple syrup and a dollop of whipped cream. The combination of sweet pumpkin, warm spices, and a hint of cayenne pepper creates a truly unique and delicious flavor profile.

These Spicy Pumpkin Pancakes weigh approximately 850g in total, making about 8 pancakes. Each serving is around 100g, with an estimated calorie count of 200 per pancake.

One unusual tip for this recipe is to add a sprinkle of toasted pumpkin seeds on top of the pancakes for a crunchy texture and nutty flavor.
