Today, I’m excited to share a unique and flavorful dish that combines the sweet and tangy flavors of mango with the creamy richness of coconut milk. This Spicy Mango Coconut Chicken Curry is perfect for a cozy night in or a gathering with friends. The combination of ingredients may sound unusual, but trust me, it’s a match made in culinary heaven!

Ingredients:

  • 500g chicken breast, cubed
  • 1 ripe mango, peeled and diced
  • 400ml coconut milk
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp chili flakes

To start, heat the olive oil in a large skillet over medium heat. Add the sliced onion, garlic, and ginger, and sauté until fragrant. Next, add the chicken breast cubes and cook until browned on all sides.

Once the chicken is cooked through, sprinkle the curry powder and chili flakes over the chicken, stirring to coat evenly. Pour in the coconut milk and bring the mixture to a simmer.

Add the diced mango and sliced bell pepper to the skillet, stirring well to combine. Season with salt and pepper to taste. Let the curry simmer for 15-20 minutes, allowing the flavors to meld together and the sauce to thicken slightly.

Once the curry has reached your desired consistency, remove from heat and garnish with fresh cilantro. Serve the Spicy Mango Coconut Chicken Curry hot over steamed rice or with naan bread for a delicious and satisfying meal.
