Exotic Spice Chicken and Sweet Potato Bake

Today, I am excited to share with you a unique and delicious recipe that is perfect for a cozy winter evening. This dish combines the comforting flavors of fall with a twist of exotic spices to create a truly special dining experience.

To start, gather the following ingredients:

  • boneless chicken thighs
  • medium sweet potato
  • can chickpeas
  • dried apricots
  • ras el hanout spice mix
  • honey
  • chicken broth
  • Salt and pepper

Now, let’s grab our kitchen tools:

  • cutting board
  • knife
  • baking dish
  • oven

Start by preheating your oven to 400°F (200°C). Peel and chop the sweet potato into small cubes, then place them in the baking dish. Add the chicken thighs, chickpeas, and dried apricots to the dish. In a small bowl, mix together the ras el hanout spice mix, honey, and chicken broth. Pour this mixture over the ingredients in the baking dish and season with salt and pepper.

Cover the dish with foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the sweet potatoes are tender.

Once cooked, remove the dish from the oven and let it cool for a few minutes before serving. This dish is best enjoyed hot, with a side of couscous or warm pita bread.
