Today, I’m excited to share a unique recipe that blends sweet and savory flavors in a comforting and colorful dish. This stuffed peppers recipe has been a favorite of mine to make during the cooler months when I crave a hearty meal that’s bursting with flavor.

To prepare this dish, you’ll need the following ingredients:

  • 3 large yellow bell peppers
  • 1 cup of cooked quinoa
  • 200g of ground turkey
  • 50g of dried cranberries
  • 100g of crumbled feta cheese
  • 1 small red onion, finely diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

For this recipe, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • skillet
  • mixing bowl
  • oven

Start by preheating your oven to 375°F (190°C) and lining a baking dish with parchment paper. Cut the tops off the yellow bell peppers and remove the seeds and membranes. In a skillet, heat olive oil over medium heat and sauté the red onion and garlic until softened.

In a mixing bowl, combine the cooked quinoa, ground turkey, dried cranberries, feta cheese, sautéed onion and garlic, salt, and pepper. Mix until well combined. Stuff the mixture into the hollowed-out bell peppers and place them in the prepared baking dish.

Bake the stuffed peppers in the preheated oven for 30-35 minutes, or until the peppers are tender and the filling is cooked through. Serve hot and enjoy the perfect balance of sweet and savory flavors in each bite.

The approximate total weight of the cooked dish is 900g, with 3 servings. Each serving weighs around 300g and has an estimated calorie count of 350 per portion.

One tip to enhance the flavors of this dish is to sprinkle a little extra feta cheese on top of the stuffed peppers during the last 10 minutes of baking for a golden and gooey finish.
