Ingredients:

  • pork shoulder (boneless) – 800g
  • mango (ripe) – 2, diced
  • chipotle peppers in adobo sauce – 3, minced
  • onion – 1, chopped
  • garlic cloves – 4, minced
  • lime – 1, juiced
  • cumin – 1 tsp
  • paprika – 1 tsp
  • brown sugar – 2 tbsp
  • vegetable oil – 2 tbsp
  • chicken broth – 1 cup
  • salt and pepper to taste
  • corn tortillas – 12
  • avocado, cilantro, and lime wedges for serving

To start, heat the vegetable oil in a skillet over medium-high heat. Add the pork shoulder and brown on all sides, then transfer it to the slow cooker. In the same skillet, sauté the chopped onion and minced garlic until fragrant.

Next, add the diced mango, minced chipotle peppers, cumin, paprika, and brown sugar to the skillet. Stir well to combine, then transfer the mixture to the slow cooker with the browned pork. Pour in the chicken broth and squeeze in the lime juice. Season with salt and pepper to taste.

Cover the slow cooker and cook on low for 8 hours, or until the pork is tender and easily shredded with a fork. Once cooked, remove the pork from the slow cooker and shred it using two forks.

To assemble the tacos, warm the corn tortillas in a skillet. Fill each tortilla with a generous portion of the spicy mango pulled pork, then top with sliced avocado and fresh cilantro. Serve with lime wedges on the side for a burst of citrus flavor.

This recipe makes approximately 12 tacos, with each serving weighing around 150g. Each serving is estimated to be around 350 calories.
