As the days grow colder and the leaves begin to fall, I find myself craving warm and comforting dishes to nourish my body and soul. Today, I’m excited to share a truly unique take on a classic winter soup – borscht! This vibrant beet soup is a staple in many Eastern European households, but my version has a twist that will surprise and delight your taste buds.

To start, you’ll need the following ingredients:

  • 3 medium beets, peeled and diced
  • 2 carrots, peeled and chopped
  • 1 large onion, diced
  • 2 potatoes, peeled and cubed
  • 3 tomatoes, chopped
  • 1/2 head of cabbage, shredded
  • 3 cloves of garlic, minced
  • 6 cups of vegetable broth
  • 2 tablespoons of apple cider vinegar
  • 2 bay leaves
  • Fresh dill, for garnish
  • Sour cream, for serving

For this recipe, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • soup pot
  • wooden spoon
  • immersion blender

Start by heating some olive oil in a large soup pot over medium heat. Add the diced onion and minced garlic, cooking until fragrant. Next, add the chopped beets, carrots, potatoes, and tomatoes, stirring to combine. Pour in the vegetable broth and add the bay leaves. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the vegetables are tender.

Once the vegetables are cooked through, remove the bay leaves and use an immersion blender to blend the soup until smooth. Stir in the shredded cabbage and apple cider vinegar, allowing the soup to simmer for an additional 10 minutes to wilt the cabbage.

To serve, ladle the borscht into bowls and top with a dollop of sour cream and a sprinkle of fresh dill. The tangy sour cream complements the earthy sweetness of the beets beautifully, while the dill adds a burst of freshness.

This unique borscht recipe yields approximately 2.5 kg of soup, enough to serve 6 hungry souls. Each serving weighs around 410 grams and is approximately 180 calories.

One tip to make this borscht even more flavorful is to roast the beets before adding them to the soup. Roasting brings out the natural sugars in the beets, enhancing their earthy sweetness and depth of flavor.
