Delicious Coconut Lentil Curry

Today, I’m excited to share a warm and comforting recipe for coconut lentil curry. This dish is perfect for a cozy night in or a gathering with friends. The rich flavors and creamy texture make it a favorite in my household, and I hope you enjoy it as much as we do.

Ingredients:

  • 200g red lentils
  • 400ml coconut milk
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp chili flakes
  • 500ml vegetable broth
  • 100g fresh spinach
  • Salt, to taste
  • Pepper, to taste

Kitchen Tools:

  • cutting board

To start, I heat some oil in a saucepan over medium heat. I add the diced onion, minced garlic, and grated ginger, sautéing until fragrant. Next, I stir in the curry powder and chili flakes, allowing the spices to toast slightly.

Once the spices are aromatic, I add the red lentils to the saucepan along with the vegetable broth and coconut milk. I bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, stirring occasionally.

As the lentils cook and soften, I season the curry with salt and pepper to taste. I also add the fresh spinach to the pot, letting it wilt into the creamy mixture.

After simmering for a total of 20 minutes, the curry is ready to serve. The lentils should be tender, and the flavors of the coconut milk and spices should have melded together beautifully.

This coconut lentil curry recipe yields approximately 1200g of delicious curry, with about 4 servings. Each serving is around 300g, and it’s a satisfying and hearty dish. One serving is estimated to be around 400 calories.

A unique tip for this recipe is to stir in a spoonful of peanut butter at the end of cooking for an extra nutty and creamy flavor. It adds a delightful twist to the traditional coconut curry.
