Today’s Recipe: Hidden Veggie Meatloaf

Hey there, foodies! Today, I’m excited to share my newest creation — a hidden veggie meatloaf. I love experimenting with different ingredients to create delicious and nutritious dishes, and this recipe is no exception. It’s the perfect way to sneak some extra veggies into a classic comfort food dish. Let’s get cooking!

Ingredients:

  • 500g ground beef (85% lean)
  • 1 medium zucchini, grated
  • 2 carrots, grated
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup breadcrumbs
  • 1 egg
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

I start by preheating my oven to 350°F (175°C) and greasing a loaf pan. In a mixing bowl, I combine the ground beef, grated zucchini, carrots, onion, garlic, breadcrumbs, egg, ketchup, Worcestershire sauce, salt, and pepper. I mix everything together until well combined, being careful not to overwork the meat.

Once the meatloaf mixture is ready, I transfer it to the greased loaf pan, shaping it into a loaf shape. I pop it into the oven and bake for about 1 hour, or until the internal temperature reaches 160°F (71°C).

Once the meatloaf is cooked through, I remove it from the oven and let it rest for a few minutes before slicing and serving. The hidden veggies add a nice moisture and flavor to the meatloaf, making it a hit with both kids and adults.

This hidden veggie meatloaf weighs approximately 1200g once cooked, yielding about 6 servings. Each serving is around 200g, with an estimated calorie count of 350 per serving.

One clever tip for this recipe is to chop the veggies very finely or even grate them to ensure they blend well into the meat mixture. This helps disguise the vegetables for pickier eaters who may be hesitant about eating their greens.
