Hey there, foodies! Today I’m excited to share with you my latest creation: Tangy Thai Tofu Tacos. I was inspired by the flavors of Thailand combined with a fun twist on a classic Mexican dish. These tacos are perfect for a weeknight dinner or a weekend gathering with friends. Let’s dive into the recipe!

Ingredients:

  • 200g firm tofu, cubed
  • 6 corn tortillas
  • 1 carrot, julienned
  • 100g red cabbage, thinly sliced
  • a handful of fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 50g peanuts, crushed
  • 30ml rice vinegar
  • 15ml soy sauce
  • 20g brown sugar
  • 2 cloves of garlic, minced
  • 1 teaspoon of fresh ginger, grated
  • 1 red chili, finely chopped
  • 15ml sesame oil

Kitchen Tools:

  • cutting board
  • knife
  • frying pan
  • mixing bowl
  • tongs

To start, heat a frying pan over medium-high heat and add the cubed tofu. Cook until the tofu is golden brown and crispy on all sides, then set aside.

In a small bowl, whisk together the rice vinegar, soy sauce, brown sugar, garlic, ginger, red chili, and sesame oil to create the tangy Thai sauce.

In a separate mixing bowl, toss the julienned carrot and thinly sliced red cabbage with a few tablespoons of the tangy Thai sauce. This will create a crunchy slaw to top your tacos.

Warm the corn tortillas in the same pan you used for the tofu until they are soft and pliable.

To assemble the tacos, fill each tortilla with a scoop of the crispy tofu, a spoonful of the crunchy slaw, a sprinkle of fresh cilantro, crushed peanuts, and a squeeze of lime juice.

Unique Tip:

For an added burst of flavor, try adding a tablespoon of creamy peanut butter to the tangy Thai sauce before tossing it with the slaw. The peanut butter will give the sauce a rich and nutty undertone that pairs perfectly with the tofu.

Once assembled, these Tangy Thai Tofu Tacos weigh approximately 1000g in total, serving 4 people. Each serving comes in at around 250g, with an estimated calorie count of 300 per taco.
