  • 400g canned chickpeas
  • 200ml coconut milk
  • 300g fresh tomatoes
  • 1 fresh red chili pepper
  • 3 cloves of garlic
  • 1 thumb-sized piece of ginger
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp coriander powder

Next, add in the chopped tomatoes and cook until they start to break down. Pour in the coconut milk and canned chickpeas (drained and rinsed) and bring the stew to a gentle simmer. Let it cook for about 20 minutes, allowing the flavors to meld together.

Season the stew with salt and pepper to taste. If you prefer a spicier kick, you can add more red chili pepper or a pinch of cayenne. Serve the Spicy Chickpea Stew hot, garnished with fresh cilantro leaves.
