Ingredients:

  • 2 medium eggplants, sliced
  • 1 cup almond flour
  • 1 cup marinara sauce
  • 1 cup shredded fontina cheese
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for frying

To start, slice the eggplants into rounds and sprinkle them with salt to draw out the excess moisture. Let them sit for about 30 minutes, then rinse and pat dry. Dredge the eggplant slices in almond flour, ensuring each piece is coated evenly.

In a frying pan, heat olive oil over medium heat and fry the eggplant slices until they are golden brown on each side. Remove from the pan and set aside on a paper towel-lined plate to drain any excess oil.

Preheat your oven to 375°F (190°C). In a baking dish, spread a layer of marinara sauce on the bottom. Place a layer of fried eggplant slices on top of the sauce, followed by a sprinkle of fontina cheese, parmesan cheese, minced garlic, and chopped basil. Repeat this layering process until you have used all the ingredients.

Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly. The aroma of the melted cheeses and garlic will fill your kitchen, creating anticipation for the delicious meal to come.
