I start by preheating the oven to 200°C. I peel and dice the purple sweet potatoes into small cubes, then toss them on a baking sheet with a drizzle of olive oil, salt, and pepper. I roast them in the oven until they are tender and slightly caramelized, about 20-25 minutes.

This unique purple sweet potato and smoked tofu soup weighs approximately 850g in total and serves 4, with each serving weighing around 212g. This flavorful and comforting dish packs a punch of about 300 calories per serving.
