Hey there, foodie friends! Today I’m sharing a delightful recipe that’s perfect for cozy evenings at home. This dish always brings back memories of chilly autumn nights spent gathered around the table with loved ones. I hope you enjoy making and savoring it as much as I do.

Ingredients:

  • boneless chicken thighs (400g)
  • red bell pepper
  • chickpeas (1 can)
  • onion
  • garlic (2 cloves)
  • cumin (1 tsp)
  • smoked paprika (1/2 tsp)
  • couscous (200g)
  • fresh parsley
  • salt and pepper

Kitchen Tools:

  • skillet
  • oven
  • garlic press

I start by preheating the oven to 180°C. While it’s heating up, I dice the chicken thighs into bite-sized pieces, chop the bell pepper and onion, and mince the garlic. In a skillet over medium heat, I sauté the chicken until browned, then remove it from the pan and set it aside.

Next, I add a bit of olive oil to the skillet and sauté the onion, bell pepper, and garlic until softened. I return the chicken to the skillet and add the drained chickpeas, cumin, smoked paprika, salt, and pepper. Everything simmers together for a few minutes to let the flavors meld.

In a separate saucepan, I bring 400ml of water to a boil and stir in the couscous. I cover the saucepan, remove it from the heat, and let it sit for 5 minutes until the couscous has absorbed all the water.

To serve, I plate the couscous and top it with the chicken, pepper, and chickpea mixture. I garnish with fresh parsley for a burst of color and freshness. This dish is best enjoyed hot, straight from the oven.

The total weight of this dish is approximately 1200g, with 4 servings at 300g each. One serving is around 450 calories.

A clever tip for this recipe is to add a squeeze of lemon juice over the finished dish to brighten up the flavors and add a zesty kick. It really takes this meal to the next level!
