This honey glazed salmon with blueberry salsa is perfect for a special dinner at home or a dinner party with friends. The combination of the sticky honey glaze on the salmon and the fresh, tangy blueberry salsa is sure to tantalize your taste buds.

Ingredients:

  • salmon fillets (150g each)
  • honey (50g)
  • soy sauce (30ml)
  • lemon juice (15ml)
  • garlic powder (5g)
  • blueberries (100g)
  • red onion (50g)
  • cilantro (15g)
  • lime juice (15ml)
  • salt and pepper to taste

To start, preheat your oven to 180°C and line a baking tray with parchment paper. In a small bowl, mix together the honey, soy sauce, lemon juice, and garlic powder. Place the salmon fillets on the baking tray and brush the honey mixture over each fillet. Bake in the oven for 12-15 minutes, or until the salmon is cooked through and flaky.

While the salmon is baking, prepare the blueberry salsa. Dice the red onion and cilantro, then mix them together in a bowl with the blueberries and lime juice. Season with salt and pepper to taste.

Once the salmon is cooked, heat a grill pan over medium-high heat. Sear the salmon fillets for 2-3 minutes on each side, until the honey glaze has caramelized and the salmon has a nice crust.

To serve, plate the salmon fillets and spoon the blueberry salsa over the top. The combination of flavors is truly mouthwatering, with the sweetness of the honey and blueberries complementing the savory salmon perfectly.
