Spicy Ginger Pork Stir-Fry

I love making this dish on busy weeknights when I want something flavorful and satisfying but don’t have a lot of time to spend in the kitchen. The combination of spicy ginger and tender pork always hits the spot for me.

Ingredients:

  • 400g pork loin, sliced thinly
  • 2 bell peppers, thinly sliced
  • 1 onion, sliced
  • 3 tbsp minced ginger
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp sriracha
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1/4 cup water
  • Cooked rice, for serving

Kitchen Tools:

To start, heat your wok over high heat and add a splash of oil. Stir-fry the pork until it’s browned and cooked through. Remove the pork from the wok and set it aside.

In the same wok, add a bit more oil and sauté the bell peppers, onion, and ginger until they start to soften. Return the pork to the wok.

In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, sriracha, brown sugar, cornstarch, and water to make a sauce. Pour the sauce over the pork and vegetables in the wok. Cook, stirring constantly, until the sauce thickens and coats everything in the wok.

Serve the spicy ginger pork stir-fry over cooked rice. The flavors are bold and spicy, with a hint of sweetness from the brown sugar. It’s a satisfying dish that comes together quickly and easily.

This Spicy Ginger Pork Stir-Fry weighs approximately 1450g once cooked, and it serves 4. Each serving is around 362g, with an estimated calorie count of 400 per serving.
