Today, I’m excited to share my recipe for Tangy Thai Tacos. This unique dish combines the bold flavors of Thai cuisine with the familiar comfort of tacos. It’s perfect for a casual weeknight dinner with a twist or a fun gathering with friends.

Ingredients:

  • chicken breast
  • pineapple
  • red bell pepper
  • onion
  • garlic
  • soy sauce
  • rice vinegar
  • honey
  • ginger
  • chili flakes
  • corn tortillas
  • fresh cilantro

  • cutting board
  • mixing bowl
  • tongs

To start, thinly slice the chicken breast and marinate it in a mixture of soy sauce, rice vinegar, honey, ginger, and chili flakes. Let it sit for about 15 minutes to absorb the flavors. Meanwhile, dice the pineapple, red bell pepper, onion, and garlic.

Heat a skillet over medium heat and add the marinated chicken. Cook until browned and cooked through, then remove from the pan and set aside. In the same skillet, add a bit of oil and sauté the pineapple, bell pepper, onion, and garlic until softened.

Return the chicken to the skillet and toss everything together to combine. Warm the corn tortillas in a dry skillet until soft and pliable. Fill each tortilla with the chicken and vegetable mixture, and garnish with fresh cilantro.
