Spicy Beef Stir-Fry with Pineapple and Cashews

Hey there, foodies! Today, I’m excited to share my latest creation with you. I was feeling adventurous in the kitchen and wanted to blend sweet and spicy flavors into a delicious stir-fry. This dish is perfect for those who love a bit of heat with a touch of sweetness. Let’s dive into this unique and flavorful recipe!

Ingredients:

  • beef sirloin (sliced) – 400g
  • bell pepper (sliced) – 200g
  • pineapple chunks – 250g
  • cashews – 100g
  • soy sauce – 50ml
  • sriracha sauce – 30ml
  • brown sugar – 20g
  • garlic (minced) – 2 cloves
  • ginger (minced) – 1 tbsp
  • rice vinegar – 20ml
  • cornstarch – 15g
  • vegetable oil – 30ml
  • salt and pepper to taste

  • measuring spoons
  • wooden spoon

To start, heat some vegetable oil in a wok over medium-high heat. Add the minced garlic and ginger, and sauté until fragrant. Then, toss in the sliced beef sirloin and cook until browned. Season with salt and pepper to taste.

Next, add the sliced bell pepper to the wok and stir-fry for a few minutes until slightly tender. In a separate bowl, mix together soy sauce, sriracha sauce, brown sugar, rice vinegar, and cornstarch. Pour this sauce over the beef and bell pepper mixture, stirring constantly until the sauce thickens.

Now, add in the pineapple chunks and cashews, stirring to combine. Let the stir-fry simmer for a few more minutes to allow the flavors to meld together. Adjust seasoning if needed.

Once everything is cooked through and well combined, remove the wok from heat. Serve the spicy beef stir-fry over steamed rice or noodles, garnished with some extra cashews for crunch.
