As we enter the colder months, I wanted to share a recipe that celebrates the cozy flavors of winter with a unique twist. Today, I’m excited to introduce you to a dish that combines the warmth of roasted butternut squash with the boldness of miso and the freshness of citrus. This dish is perfect for a chilly evening at home or a festive gathering with loved ones.

Ingredients:

  • 1 medium butternut squash (500g, diced)
  • 2 tbsp miso paste
  • 1/4 cup orange juice
  • 2 tbsp maple syrup
  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • Fresh parsley for garnish

To start, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a mixing bowl, combine the miso paste, orange juice, maple syrup, olive oil, minced garlic, salt, and pepper. Whisk everything together until well combined.

Next, add the diced butternut squash to the bowl and toss until each piece is evenly coated with the miso-orange mixture. Spread the squash out in a single layer on the prepared baking sheet.

Roast the butternut squash in the preheated oven for 30-35 minutes, or until it is tender and caramelized around the edges. Make sure to flip the squash halfway through the cooking time for even roasting.

Once the squash is roasted to perfection, remove it from the oven and garnish with fresh chopped parsley. Serve the miso-orange roasted butternut squash hot as a side dish or as a main course with a salad or grains.
