Autumn is in full swing, and with the crisp air and colorful leaves comes a craving for warm, comforting dishes. Today, I want to share a recipe that captures the essence of the season with a unique twist. This dish combines savory and sweet flavors in a delightful fusion that will surely impress your taste buds.

Ingredients:

  • butternut squash (500g)
  • apples (2)
  • pomegranate seeds (50g)
  • quinoa (200g)
  • vegetable broth (500ml)
  • ground cinnamon (1 tsp)
  • honey (2 tbsp)
  • olive oil
  • salt
  • pepper

I start by preheating the oven to 400°F (200°C). I peel and chop the butternut squash into bite-sized cubes, core and chop the apples, and spread them out on a baking sheet. Drizzle with olive oil and sprinkle with salt, pepper, and cinnamon before roasting for 25-30 minutes until tender and slightly caramelized.

In a saucepan, I bring the quinoa and vegetable broth to a boil, then reduce the heat and simmer for about 15 minutes until the quinoa is cooked and the liquid is absorbed. I fluff the quinoa with a fork and set it aside.

Once the butternut squash and apples are roasted, I combine them with the cooked quinoa in a large bowl. I add the pomegranate seeds, drizzle with honey, and gently toss to mix everything together.

To serve, I spoon the mixture onto plates and sprinkle with a little extra cinnamon for an added pop of flavor. The combination of the roasted squash, sweet apples, juicy pomegranate seeds, and nutty quinoa creates a symphony of flavors that is perfect for a cozy autumn evening.

The total weight of the cooked dish is approximately 1200g, with 4 servings at around 300g each. Each serving is estimated to be around 350 calories.

One clever tip for this dish is to toast the quinoa in a dry skillet before cooking it in the broth. This extra step enhances the nutty flavor of the quinoa and adds a delicious depth to the dish.
