Ingredients:

  • beets (250g)
  • oranges (2)
  • mixed greens (100g)
  • feta cheese (50g)
  • pistachios (50g)
  • olive oil
  • balsamic vinegar
  • salt
  • pepper

To start, preheat your oven to 400°F (200°C). Peel and dice the beets into small cubes and place them on a baking sheet. Drizzle with olive oil, salt, and pepper, then roast in the oven for 30-40 minutes until tender.
