These pistachio-crusted lamb chops are a delightful combination of crunchy nuts and tender meat that will surely impress your guests. Ingredients:

  • lamb chops (4 chops)
  • pistachios (100g)
  • fresh rosemary (1 sprig)
  • Dijon mustard (30ml)
  • balsamic vinegar (20ml)
  • salt and pepper to taste

  • frying pan
  • oven

To start, preheat your oven to 180°C. In a food processor, pulse the pistachios and rosemary until finely chopped. Season the lamb chops with salt and pepper, then spread a thin layer of Dijon mustard on one side of each chop. Press the pistachio mixture onto the mustard-coated side of the lamb chops.

Heat a frying pan over medium-high heat and sear the lamb chops, pistachio side down, for 2-3 minutes until golden brown. Flip the chops and transfer the pan to the preheated oven. Roast for 10-12 minutes for medium-rare or longer for your desired doneness.

In the same pan, deglaze with balsamic vinegar and a splash of water to create a delicious glaze. Drizzle this over the lamb chops before serving. Enjoy the crispy pistachio crust paired with the juicy, tender lamb.
