Today, I’m excited to share a recipe that brings together the bold flavors of mango and curry in a unique and delicious way. This dish is perfect for adding a burst of tropical taste to your dinner table, whether it’s a special occasion or just a regular weeknight meal.

Ingredients:

  • 300g chicken breast, diced
  • 1 large ripe mango, diced
  • 400ml coconut milk
  • 1 red bell pepper, sliced
  • 1 red onion, diced
  • 2 tbsp curry powder
  • Handful of fresh cilantro, chopped
  • 1 lime, juiced
  • To taste

To start, heat some oil in a large skillet over medium heat. Add the diced chicken breast and cook until browned on all sides. Remove the chicken from the skillet and set it aside.

In the same skillet, add the diced red onion and sliced red bell pepper. Cook until softened, then stir in the curry powder and cook for another minute until fragrant. Add the diced mango and coconut milk to the skillet, stirring to combine.

Return the cooked chicken to the skillet and simmer for about 10-15 minutes until the chicken is cooked through and the flavors have melded together. Season with salt, pepper, and lime juice to taste.

Serve the exotic mango curry hot, garnished with fresh chopped cilantro. The combination of sweet mango, savory curry, and creamy coconut milk is sure to delight your taste buds.
