Today’s Dish: Saffron-infused Paella with Octopus and Chorizo

Hello, fellow food lovers! Today, I’m excited to share a special dish that always reminds me of sunny days by the sea. This saffron-infused paella with tender octopus and spicy chorizo is a true celebration of flavors and textures. Ingredients:

  • Arborio rice (300g)
  • Octopus (400g)
  • Chorizo sausage (200g)
  • Saffron threads (1g)
  • Chicken broth (750ml)
  • Onion (1, finely chopped)
  • Garlic (3 cloves, minced)
  • Bell pepper (1, diced)
  • Tomato (1, chopped)
  • Frozen peas (100g)
  • Paprika (1 tsp)
  • Olive oil (3 tbsp)
  • Salt and pepper to taste

Start by heating the olive oil in a paella pan over medium heat. Add the chopped onion, minced garlic, and diced bell pepper, and sauté until softened. Stir in the chopped tomato and paprika, cooking for another 2 minutes until fragrant.

Next, add the Arborio rice to the pan, stirring well to coat it in the vegetable mixture. Pour in the chicken broth and saffron threads, stirring gently to combine. Bring the mixture to a simmer and let it cook for 15 minutes, stirring occasionally.

While the rice is cooking, prepare the octopus and chorizo. Slice the chorizo into rounds and sauté in a separate pan until lightly browned. Cut the octopus into bite-sized pieces and add them to the chorizo, cooking until just tender.

Once the rice has absorbed most of the liquid and is al dente, stir in the frozen peas, octopus, and chorizo. Season with salt and pepper to taste, and continue cooking for an additional 5 minutes to allow the flavors to meld together.

Remove the paella pan from the heat and let it rest for a few minutes before serving. Garnish with fresh parsley and a squeeze of lemon juice for an extra burst of flavor. Serve hot and enjoy the rich and savory combination of seafood, meat, and spices!
