Mushroom Stuffed Acorn Squash

Today, I’m excited to share a cozy and comforting dish perfect for the chilly autumn evenings. This recipe combines the earthy flavors of mushrooms with the sweetness of acorn squash for a delicious and nutritious meal.

Ingredients:

  • 1 medium acorn squash (about 700g)
  • 200g mushrooms, finely chopped
  • 1/2 cup cooked quinoa
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 cup baby spinach
  • 2 tbsp nutritional yeast
  • 2 tbsp olive oil
  • Salt and pepper to taste

To start, preheat your oven to 400°F (200°C). Cut the acorn squash in half lengthwise and scoop out the seeds. Place the squash halves cut-side down on a baking sheet and roast in the oven for about 30-40 minutes, or until tender.

In the meantime, heat olive oil in a skillet over medium heat. Add the chopped mushrooms, onion, and garlic, and sauté until the mushrooms are golden brown and the onions are translucent. Stir in the cooked quinoa, baby spinach, and nutritional yeast. Cook for another 2-3 minutes until the spinach wilts. Season the mixture with salt and pepper.

Once the squash is cooked, remove it from the oven and carefully flip it over. Fill each squash half with the mushroom and quinoa mixture, pressing down gently to pack in as much filling as possible. Return the stuffed squash to the oven and bake for an additional 15 minutes.

When the squash is tender and the filling is heated through, remove from the oven and let it cool slightly before serving. This dish is perfect for a cozy dinner for two or as a hearty side dish for a larger gathering.

Serving:

The total weight of the cooked dish is approximately 1200g, with 2 servings. Each serving weighs around 600g, with an estimated calorie count of 400 per serving.

One unique tip for this recipe is to sprinkle some breadcrumbs on top of the stuffed squash before baking for a crunchy texture.
