Butternut Squash & Prosciutto Pasta: A Creamy Fall Del

Today, I’m excited to share a unique and delicious recipe that is perfect for those cool autumn nights when you’re craving something warm and comforting. This dish combines classic Italian flavors with a creative twist that will surely impress your taste buds.

Ingredients:

  • penne pasta
  • butternut squash, peeled and diced
  • prosciutto, thinly sliced
  • onion, chopped
  • garlic, minced
  • heavy cream
  • grated Parmesan cheese
  • olive oil
  • to taste

Kitchen Tools:

  • large pot
  • baking sheet
  • skillet

Start by preheating your oven to 400°F (200°C). Toss the diced butternut squash with olive oil, salt, and pepper, then spread it out on a baking sheet in a single layer. Roast in the oven for about 20-25 minutes until tender and slightly caramelized.

In the meantime, cook the penne pasta according to package instructions in a large pot of salted water until al dente. Drain and set aside.

In a skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until fragrant. Add the thinly sliced prosciutto and cook until slightly crispy.

Pour in the heavy cream and simmer for a few minutes until slightly thickened. Stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.

Add the roasted butternut squash and cooked penne pasta to the skillet, tossing everything together until well combined and heated through.

Serve the creamy butternut squash and prosciutto pasta hot, garnished with some extra Parmesan cheese and freshly cracked black pepper.

This dish serves approximately 4 people, with each serving weighing around 400g. One serving is estimated to be around 500 calories.

One clever tip for this recipe is to save some of the pasta cooking water to add to the sauce if it thickens too much. The starchy water helps to loosen up the sauce and bind everything together perfectly.
