Autumn Comfort: Savory Pumpkin Stuffed Peppers

I’m excited to share a new recipe with you today that perfectly captures the cozy vibes of autumn. With the weather getting cooler and the leaves changing colors, there’s nothing quite like enjoying a warm and comforting meal that combines seasonal flavors in a unique way. That’s why I’ve decided to create a recipe for savory pumpkin stuffed peppers – a delicious twist on a classic dish that is sure to impress your family and friends.

For this recipe, you will need the following ingredients:

  • 4 bell peppers (any color)
  • 400g ground turkey
  • 200g pumpkin puree
  • 100g quinoa
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Shredded cheese for topping (optional)

To prepare this dish, you will need the following kitchen tools:

  • baking dish
  • skillet
  • knife
  • cutting board
  • spoon

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes from the inside. Place the hollowed-out peppers in a baking dish and set aside.

In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened. Add the ground turkey to the skillet, breaking it up with a spoon as it cooks. Season with cumin, paprika, salt, and pepper.

Stir in the pumpkin puree and quinoa, cooking until everything is well combined and heated through. Spoon the turkey and pumpkin mixture into each bell pepper, filling them to the top.

Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender. If desired, sprinkle shredded cheese on top of each pepper during the last 5 minutes of baking.

Once the peppers are cooked, remove them from the oven and let them cool slightly before serving. These savory pumpkin stuffed peppers are a delightful mix of flavors that will warm you up on a chilly autumn evening.

The approximate total weight of the cooked dish is 1200g, with 4 servings total. Each serving weighs around 300g, with an estimated calorie count of 350 per serving.

One clever tip for this recipe is to sprinkle some pumpkin seeds on top of the stuffed peppers before baking for an added crunch and a boost of autumn flavor.

I hope you enjoy making and trying this unique twist on stuffed peppers. Feel free to customize the recipe with your favorite ingredients and make it your own cozy autumn meal. Bon appétit!
