Autumn Harvest Risotto

As the weather cools down and the leaves start to change colors, I find myself craving warm, comforting dishes that celebrate the flavors of fall. Today, I’m excited to share with you my recipe for Autumn Harvest Risotto. This creamy and flavorful dish is packed with seasonal ingredients that come together to create a truly satisfying meal.

Ingredients:

  • Arborio rice (300g)
  • Butternut squash, diced (300g)
  • Dried cranberries (50g)
  • Parmesan cheese, grated (100g)
  • Vegetable broth (1 liter)
  • Shallot, finely chopped (1)
  • Fresh thyme leaves (1 tbsp)
  • White wine (150ml)
  • Butter (50g)
  • Olive oil (2 tbsp)
  • Salt and pepper, to taste

Kitchen Tools:

To start, heat the olive oil in a large saucepan over medium heat. Add the chopped shallot and cook until translucent. Next, add the Arborio rice to the pan and stir to coat the grains in the oil.

Pour in the white wine and allow it to simmer until it has been absorbed. Begin adding the vegetable broth, one ladleful at a time, stirring continuously until each addition has been absorbed before adding more. This process should take about 20-25 minutes.

In a separate pan, melt the butter and add the diced butternut squash. Cook until the squash is caramelized and tender. Add the cooked squash to the risotto along with the dried cranberries and fresh thyme leaves. Stir in the grated Parmesan cheese and season with salt and pepper to taste.

Once the risotto has reached a creamy consistency and the rice is cooked through, remove it from the heat. Serve hot, garnished with extra Parmesan cheese and a sprig of fresh thyme.
