Spiced Pumpkin & Maple Soup

As the cool fall weather sets in, I find myself craving warm, comforting dishes like soups. Today, I’m sharing my recipe for Spiced Pumpkin & Maple Soup, a unique blend of flavors that will surely delight your taste buds. The combination of creamy pumpkin, aromatic spices, and sweet maple syrup creates a truly unforgettable soup experience.

Ingredients:

  • 1 small pumpkin, peeled and diced (about 600g)
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 liter of vegetable broth
  • 2 tablespoons of maple syrup
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/4 teaspoon of ground cloves
  • 1/2 cup of heavy cream
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

  • immersion blender

To start, heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger, and sauté until softened. Add the diced pumpkin and spices (cinnamon, nutmeg, and cloves) and cook for a few minutes until fragrant.

Pour in the vegetable broth and maple syrup, then bring the mixture to a boil. Reduce the heat and let the soup simmer for about 20-25 minutes, until the pumpkin is tender.

Once the pumpkin is cooked through, remove the pot from the heat. Using an immersion blender, carefully blend the soup until smooth and creamy. Stir in the heavy cream and season with salt and pepper to taste.

Return the pot to low heat and let the soup simmer for an additional 5-10 minutes to allow the flavors to meld together. Serve hot, garnished with a drizzle of maple syrup and a sprinkle of cinnamon for an extra touch of sweetness and spice.
