Today’s Recipe: Spiced Pumpkin Curry with Quinoa

Hey there, foodies! Today, I’m excited to share my latest creation with you: a comforting and aromatic spiced pumpkin curry with a twist of quinoa. This dish is perfect for chilly autumn evenings when you’re craving something cozy and flavorful. Let’s dive into the recipe!

Ingredients:

  • 1 small pumpkin, diced (about 500g)
  • 1 cup quinoa, rinsed
  • 1 can coconut milk
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp coconut oil
  • Fresh cilantro, for garnish

Start by heating the coconut oil in a large saucepan over medium heat. Add the chopped onion, minced garlic, and grated ginger, sautéing until fragrant. Stir in the curry powder, turmeric, and cumin, allowing the spices to toast for a minute.

Next, add the diced pumpkin to the saucepan, stirring well to coat the pieces in the aromatic spice mixture. Pour in the coconut milk and vegetable broth, bringing the curry to a gentle simmer. Cover and cook for about 15-20 minutes, or until the pumpkin is tender.

Meanwhile, rinse the quinoa under running water to remove any bitterness. Add the quinoa to the saucepan, stirring to combine with the pumpkin curry. Continue cooking for another 15 minutes, or until the quinoa is cooked through and the flavors have melded together beautifully.

Season the curry with salt and pepper to taste, adjusting the spices if needed. Serve the spiced pumpkin curry with quinoa in bowls, garnished with fresh cilantro for a burst of freshness.
