As the weather starts to cool down, I find myself craving warm and comforting dishes that bring a sense of coziness to the dining table. Today, I want to share a unique and flavorful recipe for Savory Bacon and Date Stuffed Chicken that is sure to impress your family and friends.

Ingredients:

  • 2 chicken breasts (about 400g)
  • 4 slices of bacon
  • 6 pitted dates
  • 100g goat cheese
  • 1 tbsp fresh rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Start by preheating your oven to 375°F (190°C). Using a sharp knife, make a deep slit in each chicken breast to create a pocket for the stuffing. Be careful not to cut all the way through.

In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and chop into small pieces. In the same skillet, sauté the dates for a few minutes until they start to caramelize.

In a small bowl, mix the chopped bacon, sautéed dates, goat cheese, and fresh rosemary. Stuff this mixture into the pocket of each chicken breast, then use a meat mallet to pound the chicken slightly to seal in the stuffing.

Season the chicken breasts with salt and pepper. Heat olive oil in the skillet over medium-high heat and sear the chicken on both sides until golden brown.

Transfer the seared chicken breasts to a baking dish and place in the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through.

Once the chicken is cooked, remove from the oven and let it rest for a few minutes before slicing. Serve the Savory Bacon and Date Stuffed Chicken hot, garnished with extra rosemary if desired.
