Moroccan Chickpea Stew with Apricots

Welcome, lovely foodies! Today, I’m excited to share with you my twist on a classic Moroccan dish that’s perfect for cozy winter nights. This hearty and flavorful Chickpea Stew with a hint of sweetness from dried apricots is a staple in my household during the colder months. It’s easy to make, packed with protein and fiber, and oh-so-satisfying.

Ingredients:

  • 1 can of chickpeas (400g), drained and rinsed
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 1/2 cup of dried apricots, chopped
  • 1 cup of couscous
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of ground cinnamon
  • 4 cups of vegetable stock
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

To start, heat the olive oil in a large pot over medium heat. Add the diced onion and sliced carrots, and sauté until they start to soften, about 5 minutes. Stir in the ground cumin, coriander, and cinnamon, and cook for another minute until fragrant.

Next, add the drained chickpeas, chopped dried apricots, and vegetable stock to the pot. Season with salt and pepper to taste. Bring the stew to a simmer, then reduce the heat to low, cover, and let it gently simmer for 20-25 minutes, allowing the flavors to meld together.

In the meantime, prepare the couscous according to the package instructions. Fluff it with a fork before serving.

Once the stew is ready, taste and adjust the seasoning if needed. Serve the Moroccan Chickpea Stew over a bed of fluffy couscous and garnish with fresh herbs or a dollop of yogurt for a creamy finish. Enjoy this cozy and nutritious dish with loved ones on a chilly evening!
