Today, I’m sharing a recipe for Thai-inspired peanut noodles that is perfect for a cozy night in or when you want to add a bit of excitement to your weeknight dinner routine. This dish combines the creamy richness of peanuts with the zesty flavors of Thai cuisine to create a mouthwatering and satisfying meal.

Ingredients:

  • rice noodles (200g)
  • creamy peanut butter (100g)
  • coconut milk (200ml)
  • soy sauce (50ml)
  • sesame oil (30ml)
  • fresh ginger (15g, minced)
  • garlic (2 cloves, minced)
  • red chili (1, thinly sliced)
  • lime (1, juiced)
  • cilantro (for garnish)

Kitchen Tools:

  • pot
  • skillet
  • whisk
  • colander

To begin, cook the rice noodles according to the package instructions until al dente. Drain them using a colander and set aside. In a skillet, heat sesame oil over medium heat and sauté minced ginger, garlic, and red chili until fragrant.

Next, add creamy peanut butter, coconut milk, soy sauce, and lime juice to the skillet. Whisk the ingredients together until the sauce is smooth and creamy. Allow the sauce to simmer for a few minutes until it thickens slightly.

Toss the cooked rice noodles in the peanut sauce until they are well coated. Serve the Thai-inspired peanut noodles hot, garnished with fresh cilantro for a burst of freshness and flavor.
