Today’s Special: Roasted Beet Hummus

As the weather begins to cool down, I find myself craving warm, comforting dishes that still bring a touch of brightness to my palate. That’s why I’m excited to share my recipe for Roasted Beet Hummus with you today. This vibrant, velvety dip is not only visually stunning but also packed with earthy flavors that are perfect for this time of year.

Ingredients:

  • 3 medium beets, about 300g
  • 1 can chickpeas, drained and rinsed (240g drained weight)
  • 2 cloves garlic, minced
  • 3 tbsp tahini
  • 2 tbsp lemon juice
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 3 tbsp olive oil
  • 3-4 tbsp water, as needed

Kitchen Tools:

  • baking sheet
  • food processor
  • oven
  • spatula

To begin, preheat your oven to 400°F (200°C). Scrub the beets clean and trim off the tops. Wrap each beet individually in foil and place on a baking sheet. Roast in the oven for about 45-60 minutes, or until the beets are tender when pierced with a fork. Allow the beets to cool slightly before peeling off the skin.

In the bowl of a food processor, combine the roasted beets, chickpeas, minced garlic, tahini, lemon juice, cumin, and salt. Blend until smooth, scraping down the sides as needed. With the food processor running, drizzle in the olive oil until the hummus is creamy. If the hummus is too thick, add water a tablespoon at a time until you reach your desired consistency.

Taste the hummus and adjust the seasoning if needed. You can add more salt, lemon juice, or cumin to suit your preferences. Transfer the hummus to a serving bowl and drizzle with a bit more olive oil. Serve with fresh veggies, pita bread, or your favorite crackers.

This Roasted Beet Hummus recipe makes about 450g of hummus, with approximately 6 servings. Each serving is around 75g, and provides an estimated 150 calories per portion.

Clever Tip:

To add an extra layer of flavor to this hummus, try sprinkling some toasted cumin seeds on top before serving. The toasty, nutty flavor of the seeds will complement the earthy sweetness of the beets beautifully.
