Today, I’m excited to share with you a delicious and unique Fall dessert that combines two classic favorites: pumpkin pie and cheesecake. These Pumpkin Pie Cheesecake Bars are the perfect treat for cozy evenings and holiday gatherings, blending the warm flavors of pumpkin and the creamy richness of cheesecake into one irresistible bite.

Ingredients:

  • 280g cream cheese, softened
  • 150g sugar
  • 2 eggs
  • 200g pumpkin puree
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 200g graham cracker crumbs
  • 100g butter, melted
  • for topping

  • 9×13 inch baking pan
  • electric mixer
  • spatula

Start by preheating your oven to 350°F (180°C) and preparing a 9×13 inch baking pan with parchment paper. In a mixing bowl, combine the graham cracker crumbs and melted butter, then press the mixture evenly into the bottom of the baking pan to form the crust.

In another mixing bowl, beat the cream cheese and sugar together until smooth. Add in the eggs, pumpkin puree, pumpkin pie spice, and vanilla extract, mixing until well combined. Pour the cheesecake mixture over the crust in the baking pan, spreading it evenly.

Bake the Pumpkin Pie Cheesecake Bars in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly. Allow the bars to cool completely before refrigerating for at least 3 hours, or overnight for best results.
