Hey there, foodies! Today, I’m excited to share with you a recipe that combines the flavors of two of my favorite cuisines: Mexican and Thai. These Spicy Coconut Shrimp Tacos are perfect for when you’re craving something spicy, tropical, and packed with bold flavors. Let’s dive right in!

Ingredients:

  • 300g large shrimp, peeled and deveined
  • 200ml coconut milk
  • 1 tbsp sriracha sauce
  • 1 lime, juiced
  • 2 cloves of garlic, minced
  • 1 red chili, finely chopped
  • 1 ripe avocado, diced
  • Handful of fresh cilantro, chopped
  • 6 corn tortillas
  • Salt and pepper, to taste

Kitchen Tools:

I start by marinating the shrimp in a mixture of coconut milk, sriracha sauce, lime juice, minced garlic, and chopped red chili. Let the shrimp soak up all those delicious flavors for about 30 minutes. In the meantime, I heat up a skillet over medium heat.

Once the skillet is hot, I add the marinated shrimp and cook them until they are pink and cooked through, which usually takes about 2-3 minutes per side. The coconut milk creates a creamy and spicy sauce that coats the shrimp beautifully.

While the shrimp are cooking, I warm up the corn tortillas in the skillet for about 30 seconds on each side until they are soft and pliable. Then, I assemble the tacos by placing a few shrimp on each tortilla, topping them with diced avocado, fresh cilantro, and a squeeze of lime juice. Don’t forget to season with salt and pepper to taste.

Tip for Extra Flavor:

For an extra burst of flavor, try grilling the corn tortillas instead of warming them in the skillet. The slight char adds a smoky element that pairs amazingly well with the spicy coconut shrimp.

Once assembled, these Spicy Coconut Shrimp Tacos weigh approximately 900g in total and make about 6 servings. Each serving is around 150g and packs a punch of approximately 300 calories.
