Autumn Harvest Risotto

Today, I’m sharing a recipe that captures the essence of autumn with all the warm and cozy flavors of the season. This comforting Autumn Harvest Risotto is the perfect dish to enjoy on a crisp evening, surrounded by the changing colors of falling leaves.

Ingredients:

  • Arborio rice (300g)
  • Butternut squash (1/2, diced)
  • Brussels sprouts (200g, halved)
  • Bacon (100g, chopped)
  • White wine (1/2 cup)
  • Chicken broth (1 liter)
  • Parmesan cheese (50g, grated)
  • Fresh sage (10 leaves, chopped)
  • Salt and pepper to taste

To start, heat a large skillet over medium heat and cook the chopped bacon until crispy. Remove the bacon bits and set them aside, leaving the bacon fat in the skillet. In the same skillet, add the diced butternut squash and halved Brussels sprouts. Cook until slightly caramelized and tender.

Meanwhile, in a separate saucepan, heat the chicken broth until simmering. In the skillet with the vegetables, add the Arborio rice and stir to coat with the bacon fat. Pour in the white wine and cook until evaporated.

Begin adding the simmering chicken broth to the skillet, one ladle at a time, stirring continuously until the liquid is absorbed before adding more. This process will take about 20 minutes until the risotto is creamy and the rice is cooked through.

Once the risotto reaches the desired consistency, stir in the grated Parmesan cheese, chopped fresh sage, and the reserved bacon bits. Season with salt and pepper to taste.

Serve the Autumn Harvest Risotto hot, garnished with extra Parmesan cheese and sage leaves for a festive touch.
