Mushroom Risotto with Grilled Shrimp

Today, I’m sharing a unique and comforting dish that is perfect for a cozy night in or a special gathering with friends and family. This mushroom risotto with grilled shrimp is a delicious blend of earthy flavors and juicy seafood that will surely impress your taste buds.

Ingredients:

  • Arborio rice (300g)
  • Mushrooms, sliced (200g)
  • Large shrimp, deveined and peeled (250g)
  • Chicken broth (1 liter)
  • Dry white wine (1/2 cup)
  • Grated Parmesan cheese (100g)
  • Butter (50g)
  • Garlic, minced (2 cloves)
  • Onion, finely chopped (1)
  • Olive oil (2 tbsp)
  • Salt and pepper to taste

  • Large saucepan
  • Grill pan
  • Wooden spoon
  • Chef’s knife
  • Cutting board

To start, heat the olive oil in a large saucepan over medium heat. Add the minced garlic and chopped onion, sautéing until softened and fragrant. Then, add the sliced mushrooms and cook until they begin to brown and release their juices.

Next, stir in the Arborio rice, allowing it to toast slightly before deglazing the pan with white wine. Once the wine has evaporated, begin adding the chicken broth, one ladleful at a time, stirring continuously until the liquid is absorbed before adding more.

While the risotto cooks, preheat a grill pan over medium-high heat. Season the shrimp with salt, pepper, and a drizzle of olive oil before grilling them for a few minutes on each side until they are cooked through and nicely charred.

Once the risotto is creamy and the rice is al dente, stir in the butter and grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste.

To serve, spoon the mushroom risotto onto plates and top with the grilled shrimp. Garnish with additional Parmesan cheese and fresh herbs if desired.
