Gourmet Comfort Food: Saffron Risotto with Seared Scallops

Today, I am excited to share a special recipe that combines the richness of saffron-infused risotto with the delicate flavors of perfectly seared scallops. This dish is perfect for a cozy date night at home or a dinner party with friends.

Ingredients:

  • Arborio rice (200g)
  • Chicken broth (1 liter)
  • Saffron threads (1 pinch)
  • Scallops (8 pieces)
  • Butter (50g)
  • Parmesan cheese (50g)
  • Shallots (2, minced)
  • White wine (100ml)
  • Olive oil
  • Salt and pepper (to taste)

To start, heat the chicken broth in a saucepan until it simmers, then add the saffron threads to infuse the broth with their beautiful color and flavor. In a separate skillet, melt the butter and sauté the minced shallots until they are translucent. Add the Arborio rice to the skillet and toast it slightly before deglazing with white wine.

Next, begin adding the saffron-infused broth to the rice one ladle at a time, stirring continuously until the liquid is absorbed before adding more. This process will help release the starch from the rice, giving your risotto that creamy texture we all love. Grate in the Parmesan cheese towards the end of cooking, adjusting the seasoning with salt and pepper to taste.

While the risotto is cooking, season the scallops with salt and pepper. Heat a skillet with olive oil until it’s very hot, then sear the scallops for about 2 minutes on each side until they develop a nice golden crust.

To serve, spoon a generous portion of saffron risotto onto a plate and top with the seared scallops. Drizzle with a bit of olive oil and a sprinkle of Parmesan cheese for the finishing touch.

The approximate total weight of the cooked dish is 1200g, with 4 servings at 300g each. Each serving is approximately 450 calories.

One unique tip for this recipe is to add a splash of fresh lemon juice to the risotto just before serving to brighten the flavors and add a hint of citrus.
