Today, I’m excited to share with you a delightful recipe that will transport your taste buds to the streets of Marrakech. This aromatic lamb tagine is a perfect dish for a cozy night in with loved ones or to impress guests at a dinner party. The combination of exotic spices, tender lamb, and sweet dried fruits will leave you craving more!

Ingredients:

  • 600g lamb shoulder, boneless
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 2 tsp ginger, grated
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 100g dried apricots
  • 100g prunes
  • 500ml chicken stock
  • 2 tbsp olive oil
  • to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • tagine pot
  • wooden spoon

To begin, heat the olive oil in a tagine pot over medium heat. Add the sliced onion and cook until translucent. Next, add the minced garlic, grated ginger, cumin, cinnamon, coriander, and turmeric. Stir well to combine and cook for another minute until fragrant.

Cut the lamb shoulder into bite-sized pieces and add them to the pot. Season with salt and pepper, then brown the lamb on all sides. This will take about 5-7 minutes.

Once the lamb is browned, add the dried apricots, prunes, and chicken stock. Stir everything together, then cover the pot with its lid. Reduce the heat to low and let the tagine simmer gently for 1.5-2 hours, stirring occasionally.

After the cooking time has elapsed, check the lamb for tenderness. If it’s fork-tender, your tagine is ready to serve. Adjust the seasoning with salt and pepper if needed.

This aromatic lamb tagine weighs approximately 1300g after cooking and serves 4 people. Each serving is around 325g with an estimated calorie count of 400 per portion.

One unique tip for this recipe is to sprinkle a handful of toasted almond slices over the finished dish for an added crunch and nutty flavor. It elevates the dish to a whole new level!
