As the leaves begin to change and the air turns crisp, I can’t help but crave the warm, comforting flavors of fall. Today, I am excited to share with you my latest creation: a rich and indulgent Pumpkin Spice Cheesecake that perfectly embodies the essence of the season.

For this recipe, you will need the following ingredients:

  • cream cheese (500g)
  • pumpkin puree (300g)
  • Greek yogurt (200g)
  • sugar (200g)
  • eggs (3)
  • vanilla extract (10ml)
  • pumpkin pie spice (15g)
  • gingersnap cookies (200g)
  • butter (100g)

To bring this delightful dessert to life, you will need the following kitchen tools:

  • mixer
  • springform pan
  • food processor
  • spatula
  • oven

Start by preheating your oven to 325°F (160°C) and greasing your springform pan. In a food processor, pulse the gingersnap cookies until finely crushed. Melt the butter and mix it with the cookie crumbs. Press this mixture into the bottom of the pan to create the crust.

In a large mixing bowl, beat the cream cheese until smooth. Add in the pumpkin puree, Greek yogurt, sugar, eggs, vanilla extract, and pumpkin pie spice. Mix until everything is well combined and smooth. Pour the filling over the crust in the springform pan.

Bake the cheesecake in the preheated oven for about 1 hour, or until the center is set. Allow the cheesecake to cool completely before refrigerating for at least 4 hours, or overnight for best results.

Once chilled, slice the Pumpkin Spice Cheesecake into servings, each weighing approximately 150g. This recipe yields 8 servings, each serving estimated to be around 350 calories.
