Moroccan Chicken Tagine with Apricots and Almonds

Ingredients:

  • 500g chicken thigh fillets, diced
  • 150g dried apricots
  • 100g almonds, toasted
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tbsp honey
  • 500ml chicken broth
  • 2 tbsp olive oil
  • Salt and pepper, to taste

To begin, heat olive oil in a large pot over medium heat. Add the diced chicken thigh fillets and season with salt, pepper, cinnamon, cumin, and paprika. Cook until the chicken is browned on all sides, then remove from the pot and set aside.

In the same pot, add the chopped onion, garlic, and grated ginger. Sauté until the onions are translucent and fragrant. Return the chicken to the pot and add the dried apricots, toasted almonds, honey, and chicken broth. Stir to combine everything well.

Cover the pot with a lid and let the tagine simmer on low heat for about 30-40 minutes, or until the chicken is cooked through and the flavors have melded together beautifully.

Once the tagine is ready, give it a taste and adjust the seasoning if needed. Serve hot over a bed of couscous or rice, garnished with additional toasted almonds and fresh parsley.
