The Cozy Comfort of Autumn: Try This Harvest Risotto Recipe

The Autumn Harvest Risotto

Today, I’m excited to share a cozy and comforting dish that perfectly captures the flavors of autumn. This Autumn Harvest Risotto is a celebration of seasonal ingredients that come together in a creamy and flavorful dish that will warm you from the inside out.

Ingredients:

  • arborio rice (300g)
  • butternut squash (500g, diced)
  • fresh sage leaves (10 leaves, chopped)
  • chestnuts (200g, peeled and chopped)
  • onion (1, finely chopped)
  • garlic cloves (2, minced)
  • vegetable broth (1 liter)
  • white wine (150ml)
  • butter (50g)
  • parmesan cheese (100g, grated)
  • salt and pepper (to taste)

Kitchen Tools:

  • saucepan
  • wooden spoon
  • baking sheet
  • oven
  • chef’s knife

To start, preheat your oven to 200°C. Toss the diced butternut squash with a drizzle of olive oil, salt, and pepper on a baking sheet. Roast in the oven for about 25-30 minutes until tender and slightly caramelized.

In a saucepan, melt the butter over medium heat. Add the chopped onion and garlic, cooking until softened. Stir in the arborio rice and cook for a few minutes until the rice is slightly toasted.

Pour in the white wine and cook until it has been absorbed. Begin adding the vegetable broth, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding more.

Once the risotto is creamy and the rice is al dente, stir in the roasted butternut squash, chopped chestnuts, and sage leaves. Cook for another 2-3 minutes until heated through. Remove from heat and stir in the grated parmesan cheese.

Season with salt and pepper to taste. Serve the Autumn Harvest Risotto hot, garnished with extra parmesan and sage leaves.

This dish serves about 4 people, with each serving weighing around 400g. One serving of this Autumn Harvest Risotto is approximately 450 calories.

One unusual tip for this risotto is to sprinkle some crushed amaretti cookies on top before serving. It adds a unique sweet and nutty crunch that complements the savory flavors perfectly.
