Warm and Cozy Mushroom Risotto

Today, I’m sharing a comforting fall recipe that always brings me back to cozy evenings by the fireplace. This warm and savory mushroom risotto is the perfect dish to enjoy as the weather gets cooler, filled with rich flavors and creamy textures that will satisfy your cravings for a hearty meal.

Ingredients:

  • Arborio rice (300g)
  • Button mushrooms, sliced (200g)
  • Chicken or vegetable broth (1L)
  • Shallots, finely chopped (2)
  • White wine (1/2 cup)
  • Parmesan cheese, grated (100g)
  • Fresh thyme, chopped (1 tbsp)
  • Butter (2 tbsp)
  • Olive oil (2 tbsp)
  • Salt and pepper, to taste

Kitchen Tools:

  • large skillet
  • wooden spoon
  • saucepan
  • grater

To start, heat the chicken or vegetable broth in a saucepan and keep it warm on low heat. In a large skillet, melt the butter with olive oil over medium heat. Add the shallots and cook until translucent. Stir in the Arborio rice and cook for a few minutes until lightly toasted.

Next, pour in the white wine and cook until it’s absorbed, stirring frequently. Add the sliced mushrooms and continue to cook until they are softened. Begin adding the warm broth, a ladle at a time, stirring constantly and allowing each addition to be absorbed before adding more. This will help create a creamy texture in the risotto.

Once the rice is cooked al dente, remove the skillet from the heat and stir in the grated Parmesan cheese and fresh thyme. Season with salt and pepper to taste. Let the risotto rest for a couple of minutes to allow the flavors to meld together.

The finished dish will weigh approximately 1200g, with 4 servings. Each serving is around 300g and provides roughly 400 calories.

One unusual tip to enhance the flavor of this mushroom risotto is to add a splash of truffle oil at the end of cooking for a luxurious and aromatic touch.
