As the weather starts to cool down and I find myself craving hearty and comforting meals, I decided to whip up a batch of roasted pumpkin and black bean tacos. The combination of sweet roasted pumpkin, savory black beans, and a variety of bold spices makes for a truly satisfying and flavorful dish that’s perfect for any night of the week.

Ingredients:

  • 1 small pumpkin, peeled and cubed (400g)
  • 1 can of black beans, drained and rinsed (240g)
  • 8 corn tortillas
  • 1 red onion, sliced
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of cayenne pepper
  • 1 lime, juiced
  • 1 avocado, diced
  • Fresh cilantro, chopped
  • Salt and pepper, to taste

To start, preheat your oven to 400°F (200°C). Toss the cubed pumpkin with cumin, smoked paprika, cayenne pepper, salt, and pepper on a baking sheet. Roast in the oven for 20-25 minutes until the pumpkin is tender and slightly caramelized.

While the pumpkin is roasting, heat some olive oil in a skillet over medium heat. Add the sliced red onion and minced garlic, cooking until softened and fragrant. Stir in the black beans and cook for another 5-7 minutes until heated through.

Warm the corn tortillas in a dry skillet until soft and pliable. Fill each tortilla with a spoonful of the black bean mixture, roasted pumpkin, diced avocado, a squeeze of lime juice, and a sprinkle of fresh cilantro.

Serve the roasted pumpkin and black bean tacos hot and enjoy the delicious combination of flavors and textures in every bite.
