Hey there, foodies! Today, I’m excited to share a new recipe that I recently concocted in my kitchen. As the weather cools down and comfort food cravings kick in, I wanted to create a dish that combines classic flavors with a unique twist. These stuffed bell peppers are hearty, flavorful, and sure to warm you up on a chilly evening.

To start off, gather these ingredients:

  • 4 large bell peppers
  • 200g quinoa
  • 1 can of black beans
  • 100g feta cheese
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

For tools, you will need:

  • knife
  • cutting board
  • medium saucepan
  • mixing bowl
  • spoon

First, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish and set aside.

Next, cook the quinoa according to the package instructions in a saucepan. Once cooked, transfer it to a mixing bowl. Rinse and drain the black beans, then add them to the bowl with the quinoa. Crumble in the feta cheese, sprinkle in the smoked paprika, cumin, salt, and pepper. Mix everything together until well combined.

Carefully stuff each bell pepper with the quinoa mixture until they are full. Place the tops back on the peppers. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

Once the peppers are done, remove them from the oven and garnish with fresh cilantro. Serve hot and enjoy the delicious mix of flavors in every bite.

The total weight of the cooked dish is approximately 1200g, with 4 servings. Each serving weighs around 300g and contains approximately 350 calories.

One unique tip for this recipe is to add a handful of toasted pine nuts to the quinoa mixture for an extra crunch and nutty flavor.
