Ingredients:

  • 500g baby potatoes (halved)
  • 100g mixed greens
  • 100g pomegranate seeds
  • 50g Greek yogurt
  • 30ml lemon juice
  • 15ml honey
  • 30ml olive oil
  • to taste

To start, boil the baby potatoes in a pot of salted water until tender. Drain them in a colander and let them cool slightly.
